Crazy for Fried Chicken @ Las Cosas

Tuesday night, I attended a class about cooking fried chicken at Las Cosas. Buttermilk biscuits were made because they were needed for the strawberry shortcake. We did not make any gravy so there were no biscuits and gravy. I was surprised how much I liked the pickle-brined fried chicken. Also the cole slaw was good too (and I am not a cole slaw fan).

Class Description: Just for fun, and for those who LOVE a good Fried Chicken, tonight we explore the wonderful world of crunchy, juicy, tasty and just plain yummy chicken. We will make different versions from around the country and around the world! Our menu includes: Copycat KFC, Momofuku Fried Chicken with Octo Vinaigrette, Koreatown Fried Chicken, Fiery Buffalo Chicken Wings with Buttermilk Blue Dip, Pickle Brined Fried Chicken, Bacon Cheddar Scallion Waffles and some delicious side dishes including Biscuits, Gravy and Green Chile Cole Slaw. Per usual the menu items were divided up among the class members. I worked with one classmate to make the Koreatown Fried Chicken. It was delicious.

Koreatown Fried Chicken

We started with the usual tray of ingredients already measured out.

We started with the batter and mixed the dry ingredients – cornstarch, all-purpose flour, baking powder, and kosher salt.

Then we added the wet ingredients – vodka and ice cold water.

Then we worked on the soy garlic glaze – corn syrup, soy sauce, garlic, mirin, and sesame oil.

We sliced some green onions that would be used as a garnish.

We also prepped a side sauce – gochujang and hot sauce.

So all the stuff was ready to go. Next it was time to fry the chicken.

We used chicken thighs and cut them into thirds.

We put all the chicken into the batter.

Then these went into our pot of hot oil.

As each batch cooked, we laid them out on a rack.

We used a big bowl to give the fried chicken and soy garlic sauce a thorough toss and coat.

After they were all coating, we put the chicken on a serving platter, pour the extra sauce on it, and garnished with green onions.

The Other Menu Items

Copycat KFC – paprika, onion salt, chili powder, black pepper, celery salt, sage, garlic powder, allspice, oregano, basil. marjoram, all-purpose flour, brown sugar, kosher salt, whole chicken cut-up, egg white, and oil.

Momofuku Fried Chicken with Octo Vinaigrette – water, sugar, kosher salt, chicken drumsticks, vegetable oil, garlic, ginger, rice wine vinegar, soy sauce, sesame oil, sugar, and black pepper.

Fiery Buffalo Wings – included blue cheese dip and wings sauce.

Dip – mayonnaise, plain yogurt, and blue cheese.

Wings – chicken wings, vegetable oil, butter, hot sauce, and cider vinegar.

Pickle-Brined Fried Chicken – mustard seeds (brown and yellow), coriander seeds, cider vinegar, kosher salt, sugar, dill, skinless boneless chicken thighs, vegetable oil, buttermilk, all-purpose flour, honey, flaky sea salt, hot sauce.

Bacon Cheddar Scallion Waffles – all-purpose flour, baking soda, baking powder, kosher salt, sugar, eggs, buttermilk, butter, bacon, cheddar cheese, green onions, and maple syrup.

Green Chile Cole Slaw – cilantro, green chile, celery salt, sugar, rice vinegar, mayonnaise, Dijon mustard, salt, and pepper.

Strawberry Shortcake – all-purpose flour, baking powder, baking soda, salt, sugar, butter, buttermilk, strawberries, heavy cream, powdered sugar, and vanilla.
